Loaded Nicoise Salad with Tuna

What do you do with leftover Tuna Steak? You roast it, shred it and make a LOADED NICOISE!

Ingredients:

– 2 cups fresh Baby Spinach

– 1 cup String Beans, roasted

– 1 cup Beets, diced and roasted

– 1/3 cup Red Onion, sliced thinly

– 1 cup Baby Red Potatoes, steamed or boiled until soft, then halved

– 1 cup Grape Tomatoes, halved

– 1 cup Chick Peas, rinsed (canned)

– 1 cup Tuna, roasted leftover steak (if you don’t have, use canned tuna)

– 3 eggs, boiled and quartered

– 3 baby Artichokes, roasted then steams (roasting gives an awesome flavor to the artichokes but it doesn’t cook them so steam afterwards)

Dressing:

– 2 cloves Garlic, crushed

– 2-3 Lemons, juiced (depending on size of lemon and how much dressing you enjoy)

– 3 Tablespoons Olive Oil

– Salt and Black Pepper, to taste

– 1 teaspoon Cumin

**THIS RECIPE YIELDS 4 LARGE SALAD SERVINGS (MAIN) OR 8 SMALL SERVINGS (APPETIZER)
