Honey Cake with Caramelized Drunken Figs

🍯For the cake:

🐝2 1/2 cups flour

🐝1 1/2 teaspoons baking powder

🐝1 1/4 teaspoons cinnamon

🐝1/2 teaspoon salt

🐝dash of ground cloves (optional)
WHISK OR SIFT, then in a separate bowl……
🐝1 cup honey (1 1/2 if you like dessert very sweet)

🐝3/4 cup vegetable oil

🐝1/2 cup strong brewed coffee

🐝1/2 cup sugar

🐝3 eggs
WHISK UNTIL COMBINED then……COMBINE WITH THE FLOUR MIXTURE AND WHISK TILL SMOOTH
🍯Pour batter into a greased 10″ springform pan and bake in a PREHEATED 325 degree oven for 1 hour and 20 minutes.

🍯After cake has baked, as it is cooling prepare the fig topping….
🐝Melt 1 tablespoon vegan butter in a saucepan

🐝Slice 1 pint of black mission figs in half and place cut side down in the butter…….allow figs to brown on medium flame about 5 minutes

🐝In a small bowl combine: 1 tablespoon honey and 1/4 cup whiskey — deglaze the pan with this

🐝Allow the figs to absorb the liquor about 5-7 minutes more

🐝Spoon warm Caramelized liquored up figs over your cake and drizzle any remaining sauce over them.
