Italian Chicken Meatball Soup

πŸ—For the Chicken Meatballs:

πŸ‘‰1lb ground chicken

πŸ‘‰1 small onion, minced

πŸ‘‰2 cloves garlic, minced

πŸ‘‰1 egg white

πŸ‘‰handful parsley, finely chopped

πŸ‘‰salt and pepper, to taste

πŸ‘‰1 teaspoon paprika

Instructions:

Combine it all in a bowl (mix well!!!) and drop spoonfuls onto a large pan that’s been sprayed with Pam
Roast for 20 minutes at 350 degrees…..
Meanwhile……
🍡For the Soup……throw into a pot:

πŸ…1 large onion, diced

πŸ…2 cloves garlic, chopped

πŸ…1 bag carrots, peeled and diced

πŸ…3 stalks celery, sliced

πŸ…8 plum tomatoes, peeled and cubed

πŸ…2 zucchini, unpeeled, diced

πŸ…1 bag baby spinach

πŸ…1/2 of a small can tomato paste

πŸ…Handful parsley

πŸ…1/3 cup dry red wine (secret ingredient!!!!)

πŸ…2 quarts water

πŸ…Salt and Pepper, to taste

Bring to a boil, throw in the chicken meatballs and mix! Allow soup to simmer 10 minutes uncovered – this allows the alcohol in the wine to evaporate! Then….Cover and allow soup to simmer 4 hours! YES! 4 hours! Soup is ready when it is thick, rich and full of flavor!
