👉In a bowl combine:
1.5lbs lean ground beef
1 heaping tablespoon spelt/flour
Salt and pepper
Generous dusting of all spice
I like to mix this by hand to incorporate all ingredients into the meat
👉Roll about a tablespoon of the mixture into a ball (I like to massage some olive oil onto my palms before starting to avoid meat sticking to them) Continue doing this until the meat is finished – Set aside
👉Bring a large pot of water to a boil, season the water lightly with salt and all spice – with the water boiling away, drop one kibbeh ball into the water at a time. When all the kibbeh is in the water, give it mix to make sure they aren’t sticking and reduce to simmer 1 hour, covered
👉Remove the kibbeh from the water with a slotted spoon and set aside in a bowl – discard this water, it now has the bulk of the fat from the meat – you can give your pot a rinse
👉Sautee 1 large onion and 2 cloves garlic in the same pot until translucent
👉Add 1 bag of frozen peas and about 2 cups water – now you can also add as many kibbeh as you want (you can freeze some as well or just eat them plain too!) Bring pot to a boil
👉Season peas/kibbeh with salt, pepper and another generous dusting of all spice. When the water has boiled, reduce to simmer and cover for at least 1 hour.
👉Your food is ready and your home should smell DIVINE 😊 ENJOY!!
*Note: Serve over rice or quinoa, or eat as is! Some like to serve this with hamid and radishes/peppers/scallions/tarragon on the side
