Whole Grain Cinnamon Bun Recipe

  
What you need for the dough:

👉2 1/2 teaspoons yeast

👉1 cup plain coconut milk (the kind sold in a carton, like almond milk)

👉4 1/2 cups white whole wheat flour

👉1/2 teaspoon salt

👉2/3 cup coconut sugar 

👉1/3 cup Earth’s Best Vegan Butter, softened

👉2 eggs
What you need after rolling out the dough:

👉1/2 cup coconut sugar

👉1 1/2 tablespoons cinnamon 

👉2 tablespoons Earth’s Best Vegan Butter, softened
What you need after rolls are baked:

👉3 oz Tofutti Cream Cheese (plain)

👉1 cup confectioner’s sugar OR Stevia

👉1/4 cup Earth’s Best, softened

👉1 teaspoon Vanilla Extract

👉1/2 teaspoon salt
1⃣ Warm the coconut milk in the microwave 1 minute – temp should be around 100 degrees – pour into a shallow bowl

2⃣Sprinkle the yeast over the surface of the milk ✋stop! Leave the yeast mixture alone for 5 minutes, it is ready when bubbly at the top

3⃣Meanwhile, combine the ✅Flour✅Sugar✅Salt in a large bowl

4⃣When yeast is ready, quickly whisk in the ✅Butter and ✅Eggs

5⃣Immediately pour the wet mixture into the dry mixture (eggs-milk-butter into flour-salt-sugar) and start mixing! Mix until you’ve formed a ball of dough that is not sticky – you may need to work on a counter versus a bowl.

6⃣Place the dough ball in a clean bowl and cover with a towel, leave aside for 1 HOUR till dough rises and is doubled in size (keep bowl away from drafty window)

7⃣Roll the dough out into a large rectangle, about 1/4 in thick✋STOP! Let the dough rest for 10 minutes after rolling it out
8⃣Meanwhile, combine the ✅Coconut sugar and ✅Cinnamon
9⃣After dough rested 10 minutes, spreads the ✅softened butter in a thin layer all over the surface of the dough.
🔟Sprinkle the Cinnamon-Sugar mixture over the buttered surface, covering the whole surface except the end/edge (you need this to seal the rolls)
1⃣1⃣Roll the dough into an elongated log, then slice into large rolls (about the length of your thumb for each)
1⃣2⃣Place flat in a sprayed or nonstick pan/dish – NOTE: Do not overcrowd! Rolls need space to rise, they will expand to about 3x the size they are now. If you restrict their space they won’t rise properly
✋Stop! Leave rolls to rise another 30 minutes, uncovered✋
1⃣3⃣Finally! Place the rolls in a PREHEATED 400 degree oven and bake 15 minutes!
1⃣4⃣Combine the ✅cream cheese✅sugar/stevia✅butter✅vanilla✅salt – mix well to form the glaze
1⃣5⃣Glaze rolls as soon as they come out of the oven!
