Zoodle Casserole

Italian cuisine has to be my favorite ❤It just has to!
All those tomatoes in everything….and tomatoes are the way to my heart! And basil….and garlic…..and chili flakes! 🍅 🌿 🌶 I love my clean eating lifestyle, but I couldn't give up my love for Italian food just because I wasn't eating pasta! So – I simply didn't! This ZOODLE CASSEROLE was everything my Italian food loving soul needed. Make it. Devour it. No need to thank me.

🙆🏻 Ingredients:
🍅 2 zucchini, spiralized
🍅 1/2 cup Cottage Cheese
🍅1 egg
🍅1/2 cup @paesanagourmetspecialities Marinara Sauce (just 3g net carbs and 3g sugar!)
🍅1/4 cup shredded skim mozzarella cheese
🍅salt + black pepper

👉🏼Sautée zoodles with a dash of salt in a nonstick pan about 5 minutes, then drain as you would ordinary pasta and transfer to an oven safe dish (I used my @gotham_steel pan! Yes! It's oven safe!)

👉🏼Mix the cottage cheese and egg together, then add them to the zoodles and add a bit of salt and black pepper. MIX

👉🏼Flatten the zoodle mixture, top with the marinara sauce and shredded cheese.

👉🏼Cover with foil that's been perforated (to let any additional liquid evaporate) and bake in a preheated 350 degree oven about 30 minutes.
*Optional: Uncover and raise temperature to 400 to let the top layer crisp! 💋💋💋
